The First Step

We can clearly divide the recipe into three parts. The first part is the prep time, and for that, you need;

  1. 500-700 grams of fresh and large Shrimps.
  2. 5 tablespoons of the oil, better you use the olive oil.
  3. 4 tablespoons of rosemary leaves, finely chopped.
  4. 2 tablespoons garlic cloves, sliced properly.
  5. ½ teaspoons of red chili flakes.
  6. 2 teaspoons of lemon zest.
  7. Salt and pepper to taste.
  8. Pinch of sugar.
  9. 10-12 slices of the Prosciutto di Parma cut into half crosswise.
  10. Lemon wedges.

So, to start with, peel the Shrimps and devein them. Take one large bowl and mix all the olive oil, the rosemary, the garlic slices, red pepper (preferably crushed), lemon zest, salt to your taste, and add the shrimps. After adding all the ingredients, toss them well to coat the Shrimps. Let the mix sit for at least one hour to have the best flavors.

The Second Step

Now, come to the second step, where you need to preheat the grill. Wait till the grill is ready. Remove the Shrimps from the marinade and tightly wrap each of the shrimps with a slice of prosciutto. As the prosciutto is generally very thin, it will stay wrapped. The thinness of the prosciutto helps it stick with the shrimp. Take 8 pieces of thin Prosciutto di Parma and cut in halves before wrapping.

Place the shrimps carefully on the grill. You can also use metal or wood skewers. Thread 4 shrimps on each of the skewers/grills and repeat the process for the rest.

The Third and the Final Part

For the third part, just place the shrimp into the hot grill, cook for approximately 2 to 3 minutes for each side. Now again and cook for another 2 to 3 minutes and wait till the shrimps become opaque from the center. The unique smoky flavor coming from the shrimp will indicate when it’s entirely cooked and ready to be served. The chef can also cut it to test if it has been cooked well. Taste one and see if it is done or not. If yes, then turn off the oven and remove them from the grill.

Garnish with rosemary sprigs and serve on a serving platter along with lemon wedges. Serve hot and dig into the delicious meal!
