Let’s look at the things that we need to make the dish:

We need to have:

  1. 500 gms of fresh Shrimps
  2. 3 tablespoons of vegetable/mustard oil; you can also use your regular oil for cooking.
  3. 5-7 of the Habanero peppers. Discard the seeds, chop the peppers finely and wash them properly.
  4. 6 of the mangoes. Wash them and peel, cut into fine pieces.
  5. 1 tablespoon minced garlic.
  6. 3 cups of apple cider vinegar
  7. 1 chopped onion, go for a big one.
  8. ¾ cup of brown sugar.
  9. ½ teaspoon of ground ginger.
  10. Salt to taste
  11. To garnish the dish, you can use coriander or lime wedges.

Now, let us look at the preparation:

How to make the sauce?

Add oil to the pan, and then add all the chopped Habanero peppers, mangoes, garlic, apple cider vinegar, and the chopped onion. Cook all the ingredients into medium-high heat until they are cooked. Once done, let it cool and keep it aside. This you can make any time and can store it in a cool place.

After the process, stir in vinegar, ginger, sugar, and salt. These need to boil for maybe 5-7minutes and wait until they turn transparent. You can also put the sauce in a blender and blend it totally.

Peel the Shrimps if they are large in size. You can cut them into halves and put a bit of corn-flour and egg-wash them and stir fry them in high flame. Make sure they turn crisp outside. If you want to avoid oil, you can bake the Shrimps too. Now toss the shrimps and the chopped mangoes in the sauce that you have prepared. Wait till they glaze in the sauce.

Ta-Da! Your dish is now ready to serve. Turn into a plate and garnish with the left mango pieces and with some ginger and coriander. This can turn everything spicy just the way you want them to be. Hope the blend turns your summer into a tastier one.
