Wonton Soup with Shrimp and Mushrooms

The flavours in seafood completely depends upon the freshness and quality of shrimps. So if you can arrange the shrimps from the best shrimp and prawn providers then you will be able to get an enhanced flavour of your dish.

  • Unsalted chicken broth – 4 cups
  • Ginger peeled and sliced into small pieces- 1 tablespoon
  • Sesame oil -2 tablespoons
  • Frozen peas and carrots – 1 cup
  • Corn starch –  1 teaspoon
  • Mushrooms- ½ cup
  • Peeled and deveined raw shrimps – 6ounces
  • Sodium soy sauce -4 teaspoons
  • White miso – 2 teaspoons
  • Scallions, sliced with white and green part separated- 2
  • Salt as per taste
  • Fresh square wonton wrappers – 24 eaches

Step 1

Combine chicken broth, ginger, 1 tablespoon sesame oil, 3 tablespoon soy sauce and miso all together in a large saucepan. Let it boil over high heat and then reduce the heat to let it simmer and cover the pan. To another pan boil 2 quarts of water on medium heat.

Step 2

Meanwhile in a food processor add shrimps (from the best shrimp and prawn provider), mushrooms, scallion’s whites, corn-starch, salt and remaining 1 teaspoon soya sauce. Give the mixture a paste-like consistency.

Step 3

Now this is one of the most crucial steps in this whole cooking process. Lightly dust a baking sheet with corn starch. Working 6 wrappers at a time, place the shrimp filling in the centre of each base. Wet the edges of the wrapper and fold it in half over the filling to give it the shape of a triangle. Now with minimal pressure press on the both side of the wrapper to seal .Now with a slight dab of water on one of the sides bring them together, overlap them and press them to close the seal. Place the filled wontons on the prepared baking sheet. Repeat the same process to prepare the wontons.

Step 4

Now remember you had placed water to boil on medium heat, add peas and carrots to the boiling water. Cover it for 5 minutes let the peas and carrots turn a bit tender. Then slowly add half of the wantons into the boiling water very carefully and cook them until they come up and float on the surface. Once your half sets of wantons are cooked add the remaining wantons and repeat the same process.

Step 5

Placed the wantons into a serving bowl dipped in the cooked soup with vegetables into it. Serve.
