Enjoy the Delicious Combo of Cauliflower Shrimp with a Sweet and Spicy Rice Platter

Cooking Time – 15-20 minutes

Ingredients

  • Fresh Shrimps peeled and cleaned- 1 pound
  • Pepper – ¼ teaspoon
  • Egg – 2 (beaten)
  • Cauliflower- 1 (grated)
  • Medium sized onion sliced- 1
  • Medium sized carrot diced- 2 cups
  • Frozen peas – 1 cup
  • Garlics (grated) – 2
  • Ginger paste – 1 tablespoon
  • Soya sauce-¼ tablespoon
  • Rice vinegar- 2 tablespoon
  • Salted butter- 1 tablespoon
  • Sesame oil – ¾ tablespoon
  • Chopped scallions- ½ cup
  • Olive oil- 1 tablespoon
  • Salt and pepper as per taste

Method of cooking

  • Wash and chop the cauliflower and grind them partially in a blender to a rice type of consistency.
  • Place a pan on a medium heat and add 1 tablespoon of olive oil, 1 tablespoon butter and garlic which should be finely chopped. Cook it for a minute. Add ginger paste. Cook it for a minute till its raw smell vanishes.
  • Now add shrimp and cook it properly till it’s colour changes.
  • Now in a pan put 1 tablespoon butter, wait till it melts and then further add onions, chopped carrots, frozen peas, scallions. Cook them for at least 2 minutes and then add the grated cauliflower and cook all together on a medium heat. Till the vegetables lose their rawness.
  • Now add the cooked shrimps along with the little gravy it leaves behind to the vegetable mix. Then add pepper, Soya sauce, sesame oil and add salt as per taste.
  • Now slowly on a medium heat add the beaten eggs slowly and keep stirring until the eggs seep into the mixture. And you will find your dish is ready to be served.
  • Serve the delicacy and garnish it with chilies or scallions.
