Delicious Greek Shrimp Orzo

Ingredients Required :

(For 6 Servings)           (Preparation Time :  45 minutes)

  • 2 cups orzo pasta
  • 1 pound large shrimp, shelled and deveined
  • 3 tbsp olive oil
  • 2 tsp fresh basil, minced/ 2 tsp dried basil
  • 1- ½ tbsp chopped shallots
  • 2 tbsp butter
  • 1 can diced tomatoes, drained
  • 2 tbsp fresh oregano, minced/ 2 tsp dried oregano
  • 3 garlic cloves, minced
  • 1 cup oil-packed sun dried tomatoes
  • 3 tbsp crumbled feta cheese
  • ½ cup pitted Greek olives

Procedure:

  1. Firstly, cook the orzo in salted water according to the package instructions without any added fat, rinse in cold water and drain.
  2. Add a little basil and 1 tbsp of oil into the rice and toss it to coat well, set it aside.
  3. Heat butter and the remaining oil in a large saucepan and sauté the shallots until they are tender.
  4. Next add the garlic, diced tomatoes and sprinkle some oregano, stir the mixture well for about 2-3 minutes.
  5. As the mixture turns thicker, add the sun dried tomatoes and the shrimps and cook until the shrimp starts changing colour for some 3-4 minutes on each side.
  6. When it is cooked through, spoon the orzo mixture into the pan and mix really well to combine both the elements.
  7. Finally sprinkle with some leftover basil and crumbled feta cheese, lower the heat and cook for some more time.
  8. Finally serve it in bowl.
