Baked Greek Shrimp with Tomatoes and Feta

A simple, over-the-top delightful Greek shrimp recipe originates from a brilliant mind. It has swiftly converted into one of the best meals when you are on a run to cook something delicious. You start by making a quick Greek-spiced tomato gravy on the gas. Then you put the shrimp in the gravy, cover it with pieces of feta, and finally put it on the oven to bake.

Ingredients to Prepare a Delicious Baked Greek Shrimp with Tomatoes and Feta

  • Extra-virgin olive oil
  • 3 diced large shallots, 1 cup
  • 4 minced garlic cloves
  • Salt and pepper
  • Large ripe tomatoes 2 pounds
  • Crushed red pepper flakes, ½ teaspoon
  • Peeled and deveined shrimps, 1 ½ pound
  • Greek feta cheese, 4 ounces
  • Dried oregano, ½ teaspoon
  • Roughly chopped mint, 2 tablespoons

Directions to Prepare

  1. Take a wide skillet and pour 4 tablespoons of olive oil over medium heat. Add garlic, shallots, pepper, salt. Cook them until the mixture is softened for about 5-8 minutes. Try managing the heat in between and prevent the entire mix from browning. While pouring tomatoes, switch off the stove.
  2. Take a saucepan, pour water and boil it. Then, cook tomatoes for about two minutes until you observe the skin loses. Instantly, plunge it into a cold-water bowl and set it to cool. Take a parking knife, core tomatoes and take the skin off. It’s time to cut the tomatoes into thick wedges.
  3. Now, preheat the oven to 400 degrees and get back to the skillet with medium-high heat. Simply add the tomato wedges and season with salt, red pepper, pepper along with the flakes. Cook until the mix turns juicy and tomatoes have been completely softened for about 10 mins. Take the entire mixture and transfer it to a shallow baking dish, preferably, an earthenware.
  4. Place shrimp in a mixing container with one tablespoon olive oil, add salt and pepper and stir on the shrimps and coat. Then, take the shrimps and arrange them over the tomato mix and make one layer. Add grated cheese all over the surface and let the oregano sprinkle.

  6. Set it to bake for ten to twelve minutes until the tomatoes have slightly browned. Take it out from the oven and set it to rest for 5 minutes. Sprinkle freshly chopped mint.
